Chive-Peppercorn Cauliflower Cakes

I came across a recipe on Pinterest for cauliflower wraps and thought they could easily be adapted and used in place of corn cakes, english muffins, biscuits, corn bread, etc.  Try swapping out the chives and peppercorns for green chilis and cilantro, or fresh basil and garlic.

Ingredients

  • 1 head cauliflower, core removed and chopped
  • 4 whole eggs
  • 2 Tbsp fresh chives, minced
  • 1 Tbsp freshly ground black peppercorns
  • 2 tsp ground everyday seasoning
  • salt, to taste

Place the cauliflower in a baking pan and drizzle with olive oil.  Season with everyday seasoning and roast in the oven for about 30 minutes at 425° or until cauliflower is softened.  Pulse in batches in the food processor until it is the consistency of rice.

Scramble eggs in a large bowl and combine with cauliflower.  Add chives, ground peppercorns and salt.  Spoon into a nonstick muffin pan and bake at 350° for…
