I know chickpeas aren’t paleo, but these look so yummy!
Roasted chickpeas make a great snack food. The salt and vinegar in this recipe are reminiscent of the popular potato chip and the beans are extremely addictive. They are a healthier, high protein solution to snacking. Here’s how to make them:
-1 can chickpeas (drained and rinsed)
-3 cups vinegar
-1 tbsp. olive oil
-3 tsp. kosher salt
Combine chickpeas and vinegar in a pan over medium heat. Bring to a boil and remove from heat. Allow chickpeas and vinegar to sit for 30 minutes. Preheat oven to 425 degrees. Drain chickpeas and toss with olive oil and salt in a large bowl. Spread chickpeas over cookie sheet and bake for 30 min, rotating the chickpeas halfway through. Serve, and get snacking!
