Breakfast & Omega 3 Eggs

I made a yummy breakfast today by boiling a couple of Omega 3 eggs and then baking some delicious, spicy yam chips. I’d never had yams, but I’m always willing to try another veggie. These reminded me of the way I used to eat potatoes! Except these were sweet & spicy (my favorite flavor combo). I topped my eggs with a dash of Sriracha Sauce, YUM!

    Thanks for the info, I love eating eggs, going out for breakfast is my favorite meal, but for some reason, I can’t seem to get it right cooking at home. Scrambled are fine at home, but fried or omelet and it comes out smelling funny (the eggs are fine). Does anyone have any helpful hints for the best way to cook eggs?

    And can anyone else smell the fish in Omega 3 eggs? Or am I just odd?

    • I baked them at about 350. My oven is ancient and unreliable, so I use a oven thermometer. I don’t even trust that thing. I brushed the pan with coconut oil, then brushed each slice with a little. I sprinkled mine with Tony Chachere’s cajun seasoning. I just love the spicy/sweet combo! I flipped them at about 10-15 minutes. It might be different for you. I’m at a high elevation (9000 ft), so I’ve had to experiment with pretty much everything I bake. Baked for about another 10-15 minutes until they were brown and crispy on both sides. The edges were a little crispy, but the centers were chewy. A very yummy breakfast! Good luck!
