Nourishing Origins

Kale is one of my favorite vegetables and makes an appearance at least once a week if not more. It is a veritable antioxidant cache with an abundance of essential VItamin K and ranks highest on the ANDI nutrient scale at 1000. Now I know that many people have had less than thrilling culinary experiences with kale usually along the lines of the overcooked, flavorless or mushy variety. Or they complain that it takes too long because you have to cook it so long to break down the fiber. However, they have not had the opportunity to sample the culinary delight that is roasted kale. I am a firm believer in using the oven to do a lot of my work- especially when I’m not in the mood to hover over a simmering array of pots and pans.
