Flax Pancakes

Tom made these pancakes the other day and they were AWESOME! We topped them with a little butter and some Grade B Maple Syrup. The REAL maple syrup, not that high fructose corn syrup crap that you can buy for cheap. Real Maple Syrup has a stronger, wilder taste than fake syrup. It also has a higher nutrient content. You don’t need to drown your pancakes in this stuff. We use it sparingly and keep it refrigerated.

6 tbsp of flax meal
3 eggs
1/4 – 1/2 of cinnamon
1 tsp of baking powder
Pinch of salt
1 tbsp lc milk or cream and water
1 tbsp sf vanilla syrup or 1 tsp of extract + 2 tsp water
1 – 2 tsp agave syrup or honey

 

I was really surprised that these didn’t make me feel all bloated like regular pancakes. That’s because they’re ALL flax fiber and they’re good for you!

This recipe makes about 6 smallish pancakes. We ate them all!
